It's a GIRL!!

Yesterday at the ultrasound we found out we are going to have a little girl. It was actually the same lady that told us Grace was going to be a girl, so she has a pretty good track record with us!

We can't wait to meet little Bella. Eddie was thrilled because he wanted a girl sooo bad. I told him that they might be easier now but just wait until they are 15 and 17. He's going to go crazy!!

Burrito recipe

So, here's a fall back recipe I use when I don't have a lot of time to cook or I will be gone for most of the day. It is my version of a Chipotle or Qdoba burrito. 

First I put 3-4 chicken breasts in a crockpot on high 3-4 hours, low 6-7 hours or just until you can shred the chicken with two forks. After shredding it I put a marinade on it. I use Lawry's baja chipotle. Then I leave it in the crock pot on low for 30 minutes or so. I cook instant rice by adding a T. butter and 2-3 T. of lime juice to the water. After the rice cooks I add some cilantro to it. I also make black beans just right out of the can and add cilantro and lime juice to that too. In addition you can also slice up your favorite bell pepper and onion and saute in a little olive oil and garlic. None of this takes very long at all. I sere all this with guacamole and/or sour cream and salsa. Everyone then assembles their burritos with whatever they wish, which is usually everything! 

Our summer fun

Grace is now 21 months old! I can't believe it! She is talking soo much. New words come out of her mouth everyday. Right now her favorite movies are "Annie" and "Wizard of Oz." She pretends to sing "Tomorrow" by singing "a..... day...." all over the house while carrying her puppy like Annie. She has such an imagination! She is also, to my surprise ready to get out of diapers. she always wants to be a big girl like mommy and daddy (as she puts it) and sit on the toilet. And she does actually go. So, we finally got her her own toilet seat and are hoping to get some big girl panties soon! I really don't know what I am doing, just learning as I go. I will be thrilled if we can get her out of diapers before the next one comes in february. We will also be finding out if we are having a boy or a girl this Thursday at an ultrasound. Eddie and I just can't wait! I will let you all know soon!!

First Blog post

So, this is my very first attempt at this blogging. I have been asked by several people to start a blog, especially about our little girl Grace and the new one one on the way! I also got to thinking that it would be great to exchange any ideas on raising kids, little tricks of the trade, baby/kid products that really work and are worth the investment. I am definately no expert, but I feel I have learned the most from watching other mothers with their children than any book I could have read. I am also very much into cooking since I have become a stay-at-home mom, so I would love to share some of the recipes I put together of find, and would love to get any one else's favorites as well. Any little thing helps. Anyway, I just wanted to start out with a little intro. I will blog soon with pictures of Grace and an update on our little girl.
